I’ve been meaning for ages to work out how to make this so that it is as similar to the takeaway version as possible. There are lots of different versions around the internet and I’ve tried a couple. This is as close as I’ve got so far. I’m pretty pleased with this version and, as many of the recipes on Thrifty Lesley are, it’s pretty variable too.
Another variation of pesto today – rocket, watercress, basil and sunflower seed. Even a cheap pesto is almost twice as much, and that assumes you buy your herbs. Bargaintastic!
Mmmm, lovely! Surprisingly mild in sage flavour, a very slight sweetness from the raisins, nuttiness from the pumpkin seeds, a little citrusy hit and that distinctive Olive oil flavour.
