Salami & Mixed Vegetable Soup with Croutons
You can add any veg you like to this soup, cabbage, finely shredded and cooked for just a few minutes in the soup at the end – a handful of frozen peas and/or sweetcorn – broccoli or cauliflower stems or stalks – spinach or sorrel, wilted in at the end – sliced mushrooms
Cauliflower and chick pea soup with little dumplings
This tasty veggie soup makes use of an ingredient that perhaps you haven’t before, the stems and stalks of a cauliflower head. I actually prefer the taste of the stems to the florets!
Tomato Scones
These scones have a strong tomato, savoury flavour and really hit the spot. The recipe for 3 ingredient scones couldn’t be simpler. If you are looking for dairy free and vegan recipes, these scones do not contain any dairy or animal products
Carrot Hummus, creamy with tahini
Sesame being a common allergen, make a hummus without tahini by substituting peanut butter. It’s just as nice without either. Mix up the spices too for different flavour variations
Creamy Apples and Croutons 37p a serving, 17p if you have apples in the garden
Apples, fried in butter, sweetened with muscovado sugar, mixed with soft cheese, and crunchy buttery croutons. Oh my, so good!
Corned Beef Hash
After doing the corned beef pie recipe recently, I still had half a tin of corned beef remaining to use up. I could have done another 4 portion pie and popped it in the freezer (except the freezer is bulging with fruit at the moment), but instead I made a kind of hash. The fritters/ hash/ what you will were very tasty, and again, we both had them 2 days running. Half a tin of corned beef will make 2 x 2 person servings or a great cheap family meal.
Corned Beef & Mushroom Pie
I know that I specialise in cheap family meals, but pies are one of those base recipes that once you have mastered it, there are many variations that will mean using the same recipe, but giving you lots of different flavours to enjoy.
If you like things like steak and kidney pudding, it would be worthwhile trying this steamed as a pudding. Cook in a slow cooker to save fuel.
Even more plums, a few apples and yukky fingers
I harvested another 10kg of Victoria plums yesterday, 1.7kg of Discovery apples. Plus 3.3kg of wasp ruined, spotty Scrumptious apples from the back garden. These were, by a long way, the best apples last year. They’re not very good this year! The 2 plums on the top of the basket are the entire harvest from a plum tree in the back garden, bit of a contrast with those in the front!
Cheap lentils, slightly cheaper chorizo, and practically free silky hands
A couple of small things today. First of all, we were working in Northfleet again today. There is a big Morrisons there and I popped in as I know they have big bags of lentils. So I got a huge 5kg bag of red lentils at 10p per 100g, which is half the cost I usually...
Meatless Sunday Lunch
I accidentally had a Sunday lunch without the meat when I was a child. My parents didn’t miss it, no-one else noticed – would you?
Pizza, 32cm, chorizo and roasted vegetable
Oh my goodness, this was SO good. Soft roasted vegetables, spicy paprika chorizo, smooth tomato sauce, crispy thin pizza base. Yum YUM This mixture made two 32cm pizzas, you could make both and have one the next day, or freeze one, ready made up to pop in the oven. 1...
