You could swap out the pumpkin for any other vegetable you want to use. So potato and mushroom, or carrot for instance. This would freeze well, so if you are a singleton, or won’t use all 4 portions within a day or so, pop it into the freezer, ready for a lovely homemade convenience meal.

Use any herbs you have to hand, fresh are nicer than dried if you can get them. If you want to, and have any available, many additions can be made to an omelette. A few fried mushrooms, a sprinkle of cheddar, a couple of oven dried tomatoes, 3 or 4 prawns, a crispy rasher of bacon, a few shreds of chicken. Have a look and see what you have got in those little dishes in the fridge – you do keep your leftover bits and pieces – don’t you?

Pasta & Tomato Sauce, Meal Plan 9, 33p

Simmered down a  little more, you can use this as a pizza base, or over a plate of steamed veg, or with rice. Or tip it over your pasta, with or without any extra veg,  and put it in an oven proof dish and bake it in the oven for a pasta bake. A tin of value tuna stirred through before baking is extra nice.I think this sauce is much nicer than the bought ones, and nearly as quick.
