What did you last spend £1 on?
LBLUK15 is coming up fast now. It is due to run 27th April to 1st May, although it can be done before that if I wanted to. I have been thinking about what I might buy with the £5 and this is what I am currently thinking of.
Coffee and walnut, no, not cake, biscuits.
I made a variation of the coconut biscuits, swapping out the coconut and adding a heaped tsp of instant coffee dissolved in a tbslp of water, and 30g of walnuts, chopped fine.
Meal plan 8 – Oaty fritters, veg, chilli & yogort
These are amazingly good, crispy and delicious. Well, I was amazed when they came out as delicious as they did anyway!
2 sandwiches, 2 toasty breakfasts and 2 pasta dinners from 1 tin of sardines.
This super economical idea uses a tin of sardines in tomato sauce and some cheap baked beans to make something delicious. 2 sandwiches, 2 toasty breakfasts and 2 pasta dinners from 1 tin of sardines.
Meal Plan 8 – Chicken and veg with a coconut & peanut butter sauce 45p each
This is a yummy dinner on Meal Plan 8. Crispy veg, gorgeous, nutty, creamy sauce, yum yum.
Good night, sleep tight, don’t let the bed bugs bite
Are you feeling stressed today, will you have trouble sleeping tonight? I am sensitive to caffeine in tea, coffee, cola etc, and the caffeine and theobromine in chocolate. If I have any, not only am I very likely to get a migraine, but it will probably keep me awake...
Spicy katjan sauce, so gorgeous I’m eating it with a spoon

Spring is Springing
I’ve tried testing a recipe three times so far and it just won’t go right, so I’ll delay posting it until it does. Went out last night for a birthday celebration to Pilio, a fabulous small Greek bistro in Heathfield. It is extremely popular, so popular in fact, that...
The Live Below The Line UK challenge, 2015 – LBLUK2015
Here on Thrifty Lesley, we explore many ways of eating on £1 a day. And that is quite enough of a challenge for me. I couldn’t even contemplate existing on that £1 for everything. This email pinged into my inbox today and I reproduce it more or less in full as it...
Gallivants and puddens
Got a very busy day today. Been catching up on paperwork and doing lots of little jobs - where do they all come from. I'm off to WI committee in a bit, a quick bite round the Presidents house, then we're off to see Love's Labour's Won, better known as Much Ado About...
Cooking around the world
Had another brilliant evening at Claverham college yesterday. We did Empanadas, a similar recipe to this one from Good Food. Some people there hadn’t made pastry before, so that was bit of a challenge for them. I’ve made tons of the stuff in my time! Empanadas are...
