Week Six Meal Plan - Oats, Pepperoni & EggsAs yesterday, this plan is an extended version (2 more days added) of a Live Below the Line 2014 plan I did for ActionAid. It looked quite nice, so I thought I would add it to our meal plan list. It is harder to do £1 a day...
Week Five Meal Planner – Brie, Chicken and Eggs
A 7 day meal plan for 1, based on Brie, Chicken and Eggs
Stunning 3 Course Valentines Day Dinner, £1.84 a head
We have a Smoked Salmon and Crispy Toast starter, a main of a warm Asparagus, Bacon and Egg Salad, and a pudding of Chocolate Cherry Cake with Cream. It all comes in at £1.84 a head, which I think is very good value.
Eating during the festive week at £1.30’ish per person per day
This is a suggested week with approximate costs, and a few alternative ideas. I have plundered Thrifty Lesley archives for some of the cheaper recipes to bracket the more expensive provisions for Christmas Day itself. Suggested amounts are for 2 people, as usual. Herb Bread, 6p a serving
250g flour mixed with yeast, water and a handful of something else makes four portions of lovely bread
Gigantes Plaki and pitta
Giant butter beans, in a spicy sauce and served with a pitta bread, couscous, or anything else you fancy. Part of meal plan 4
Butter Bean and Vegetable Curry
This recipe is one I have had in my recipe book for a very long time. As is the case with many curries, it is very variable. You can change the vegetables around pretty much to whatever you want
Gnocchi made with dried mash! Served with tomato sauce
Delicious, light gnocchi made with dried mashed potato! Very versatile when you make them yourself, lots of different flavourings can be used
Meatless Sunday Lunch
I accidentally had a Sunday lunch without the meat when I was a child. My parents didn’t miss it, no-one else noticed – would you?
