Meal Plan 4 – a scrummy lunch of Butter Bean Pate, carrot sticks & pitta, 18p
This didn’t take long to prepare, although I did have a big dish of butter beans, already cooked, in the fridge. It was filling, even tho it was less than 300 calories, and 3 hours later, I am not in the least bit hungry. It tasted really good with the carrots. A tasty lunch from the simplest of simple ingredients.
Pancakes, with lemon and sugar, the classic, less than 3p each
I couldn’t tell the difference between my usual ones, made with eggs and milk, and these. Costwise, these could be doable, where egg and milk ones weren’t
Herb Bread, 6p a serving
This recipe is based very much on Jack Monroe’s Simple Herb Bread. It is served with soup on meal plan 4 which will feed 2 adults for 7 days at a cost of £1 each per day. You will need250g value flour, 45p/1.5kg, 8p1 sachet yeast (7g) 28p/2 sachets 14p (much cheaper...
Gigantes Plaki and pitta, 38p a serving
This recipe features in meal plan 4 and is one of Jack Monroe’s. I have had to adapt it a bit as we don’t have a couple of the ingredients available in the meal planner. Other than that, it is the same thing. I have split the recipe into 2 rather than 4 portions for...
Spiced Parsnip Soup 17p a serving. Serve with tomato scone or herb bread
This is a delicious soup. Mildly spicy and creamy, a lovely cold weather lunch, filling, warming and tasty. Serve with either herb bread or tomato scones.
Butter Bean and Vegetable Curry – 24p a serving
This recipe is one I have had in my recipe book for a very long time. As is the case with many curries, it is very variable. You can change the vegetables around pretty much to whatever you want
Granola, 8p a serving, 14p including the milk
Made some granola this evening. The whole place now smells of vanilla, a delicious smell. The granola is for the 4th meal plan and the entire huge box of it is available for use during the week if required.
Carrot & Sultana Loaf – 9p per serving
if you take 250g flour, some yeast and water, you can add many, many different things to it and get a lovely loaf, with 4 portions, to use for any meal
Tomato Scones, 5p each
These scones have a strong tomato, savoury flavour and really hit the spot. The recipe for 3 ingredient scones couldn’t be simpler. If you are looking for dairy free and vegan recipes, these scones do not contain any dairy or animal products
Vegetable Casserole & Dumplings, 46p a serving
Only takes about half an hour to make and is a delicious warming dish to come home to. Root vegetables in cder or apple juice, with cheesy dumplings on top
