Another entry for the library of lasagne – a tomato one. This is one I made a while ago and posted on Facebook, but didn’t write a proper post

 

Tomato Lasagna

Serves 4. Priced at Asda March 2019

Ragu layer

1 large onion, finely chopped, 75p/kg, 8p
200g carrot, grated, 70p/kg, 14p
2 tins of good tomatoes, not value ones, £1
2 tsp garlic granules £1.09/115g, 5p
2 tsp sugar
2 tsp salt
2 tblsp olive oil, £2.98/litre, 8p

Bechamel layer

50g butter, Asda £1.45/250g, 29p
50g flour, 2p
500ml milk, £1.09/2.27litres, 24p
fresh grated nutmeg
salt and pepper

100g flour (3p) to make pasta or buy lasagna sheets
80g grated cheddar £3.69/825g, 36p

Total cost £2.29, 57p per serving (4)
Total nutrition 1728 calories, 42g fat, 106g carbs, 68g protein, 16g fibre
Nutrition per serving (4) 432 calories, 21g fat, 53g carbs, 17g protein, 4g Fibre

Quantities to serve 2

Ragu Layer

a chopped onion
100g carrot, grated
tin of good tomatoes, not value ones
tsp garlic
tsp sugar
tsp salt

Bechamel layer

25g butter
25g flour
250ml milk
fresh grated nutmeg
salt and pepper

50g flour or buy lasagna sheets
40g grated cheddar

Make a sauce with the flour and semi skimmed milk, mustard (makes it taste cheesy), salt and pepper. I made it using the microwave, whisking every minute until thickened

Sauté the onion and grated carrot in the olive oil until cooked through. Add the tomatoes, garlic, sugar, salt and cook gently for 15 minutes or so to reduce and improve the flavour.

Visually divide your tomato sauce & bechamel into 4

Now layer into a suitable sized oven proof dish

Sprinkle of cheese
Lasagna sheet

Top with remaining cheese

Bake in a medium oven for 30-40 minutes

Verdict

This wasn’t very pretty, but cheese and tomato is such a classic combination of flavours, this was almost certain to work. I was very pleased with how it turned out.  A dish of lasagna with garlic bread, or chips, and a bit of salad is dinner heaven
