This is a Northern Indian cabbage recipe, packed full of vegetables, pulses and spices. Make it hot if you like things that way. Personally, I like a lot of spice and hardly any heat

Punjabi Cabbage

When I first made this, we had it with Matar Paneer (cheesey peas) and a home made Naan. This was a good combination of flavours and textures

Vegan and gluten free

This Punjabi dish is vegan and gluten free if that is of interest to you. Alternatively, you may be looking for dairy free and gluten free recipes. My brother is coeliac, and this often comes with a sensitivity to lactose as well, as if avoiding gluten on its own wasn’t difficult enough!

What do I need to make Punjabi cabbage

Ingredients

Priced at Asda 2May24 – Asda because Aldi and Lidl don’t have split peas

  • 1/2 onion, 99p/kg, 10p
  • 500g green cabbage, 80p, 40p
  • 1 garlic clove, 39p, 4p
  • 100g yellow split peas. £1.20/500g, 24p
  • 2.5cm piece of ginger £1.85/500g, 2p
  • 2 green chillies 55p/60g, 15p
  • 4 tablespoons vegetable oil £1.85/1litre, 11p
  • 1 tsp cumin seeds 99p/100g, 3p
  • 2 tsps ground cumin 99p/100g, 6p
  • 1 tsp ground turmeric £1/100g, 3p
  • 1 tsp ground coriander £1/100g, 3p
  • 1 tsp salt
  • 1/2 tsp ground black pepper 99p/100g, 1p
  • 1 tablespoon butter or Pure etc if vegan £1.69/250g, 10p
  • Total cost £1.32

 

How to make Indian cabbage & peas

  • Cook the split peas until tender. This will take about 40 minutes. Soak if you like first. If you soak overnight, the peas will only take about 10 minutes to cook
  • Deseed and chop the chillies
  • Chop the onion. Grate the garlic. Finely chop the ginger
  • Shred the cabbage
  • Put the onion, chillies, garlic and ginger in a pan and saute until softened
  • Add the cumin seeds and turmeric and stir for a bit
  • Add the cabbage and stir the spice mixture through until it has coated the cabbage
  • Add the salt, pepper, coriander, ground cumin and chilli if using
  • Add the cooked split peas
  • Cover and cook gently for about 10 minutes, adding a splash of water if it starts to stick to the pan
  • Add the butter, or alternative, stir through
  • Check seasoning and add a little water if necessary

How to Store

The cooked recipe will keep in the fridge, covered, for several days. Or freeze it, well wrapped.
This is one of the recipes I like to make 4 portions of, for the 2 of us, and either have it 2 days in the same week, or store in the freezer for a lovely home made ready meal.

What changes can I make

  • any kind of cabbage will work just fine, so red, white, green or Savoy
  • use a curry powder or paste instead of the separate ones
  • use green, brown or puy lentils instead of the split peas
  • or any kind of bean. Mung or aduki beans would work particularly well or even rinsed baked beans
