I made this salad with chicken and mango in one of the Cooking Up A Storm groups that I do with my local u3a. It was very simple, quick to make too, and very delicious!

This is one of the more expensive recipes on Thrifty Lesley, so if funds are short, maybe something for a special occasion.

What do I need to make chicken and mango salad

Makes 4 portions

  • 4 cooked chicken breasts
  • 250g diced mango
  • Cucumber, diced
  • 6 tbsp mayonnaise
  • 4 tbsp mango chutney
  • 1 red pepper, deseeded and sliced
  • 3 spring onions, trimmed and chopped
  • Little Gem lettuce to serve

How do I make this recipe for a salad with chicken and mango

It’s very simple to make and takes no time at all. Great for a quick dinner after work or packed lunches for all the family.

  • Cut the cooked chicken into bite sized pieces.
  • Mix the mayonnaise and chutney together
  • Mix in everything else
  • Serve on Little Gem lettuce

Variations

  • It would be lovely with a tin of cooked chickpeas or lentils stirred through to stretch it out. You could maybe use half the more expensive chicken then.
  • Swap the chicken for feta, pork cubes or turkey
  • Would be great for lunches, but keep the sauce separate as the salt draws out the juices and makes it runny

    4 chicken breasts
