my meal plan for week 3rd August 2020

This Weeks Meal Plan

Monday – Bean Burgers, Root Chips and Red Cabbage Coleslaw. The root chips are frozen ones that I splashed out on. My husband particularly likes these burgers. 

Tuesday – Miso Crispy Topped Veg, I thought I’d posted that recipe, but apparently not. I’ll get it written up

Wednesday – Beef & Veg in some form, I’m not sure what yet. Will be using some more of the dinosaur leg Mike brought home

Thursday – Cauliflower and Almond Stuffed Pancakes. Having another go at these as the last time they weren’t all that nice. I know they can be, I just got it wrong last time

Friday – Beetroot & Orange Lasagna with some kind of salad, or maybe the mushroom one from last week that didn’t get made. I got frozen mushrooms to make it with, so there’s no waste. The beetroot is in a vacuum pack in the fridge and has been in there for weeks now, hence this version this week

Saturday – Panzanella. The tomatoes in the greengrocers, and sometimes in the supermarkets are lovely summer ripened ones. Perfect for this. I might even have a few ready in the greenhouse

Sunday – Roast Beef & Trimmings. We made a start last Sunday on the enormous joint my husband brought home, and I’ll use some more for another Sunday roast this week

So that’s the plan for this week, we’ll see how it goes. My husband does have a tendency to upset all my careful planning by wanting to go out for lunch and on other days to get a takeaway, when he gets enough for at least 2 days. It’s very nice, and we are fortunate enough to be able to do it, but I have to be careful things don’t get wasted. Last week, he was working in Tunbridge Wells, so the quiche didn’t get made on Wednesday and on Friday, he wanted a Chinese takeaway, which he had that day and used up on Saturday, even though we’d gone out for lunch already! So the lasagna didn’t get made either
