This Weeks Meal Plan

Monday – Halloumi deep fried in batter, with some root chips that I bought frozen. A local pub does veggie fish and chips by deep frying halloumi, so I thought I’d give it a go

Tuesday – Cabbage & Potato Subji, with Kachumbar. This is a new recipe to me, from one of my many cook books. I’ll let you know how it goes

Wednesday – Courgette & Celeriac Frittata. We haven’t been having many eggs, so need to use them. I have some diced celeriac in the freezer that I’d got for soup, but it’s been in there a while now, and its far too hot for soup

Thursday – Greek Salad & HM Pitta. Something quick and easy, other than the pitta, not particularly quick, but I don’t have to actually do much

Friday – Cabbage, Sultana & Nut Pasta Bake. Got lots of cabbage, and this is a delicious way of using it

Saturday – Thought I’d do a ploughmans, with HM baguette, haven’t had one for ages

Sunday – I’ve never done a twice baked souffle, so thought I’d try it. What caught my eye was the recipe saying that all kinds of bits and bobs can be used up in a souffle!

So that’s the meal plan for this week, as usual, we’ll see how it goes. Still haven’t had a lasagna, and we’re grocery shopping tomorrow and Mike is already talking about having lunch out. It’s no wonder the larder and freezer are stuffed full!

    What an amazing meal plan for a week and they all sound truly delicious and i will trying to make greek salad…and trying to follow us…Thanks for sharing……!

    The cabbage potato dish sounds nice. I do a one pot cabbage rice curry, I use soya mince in it, but the original recipe used mince. I know it’s a bit late, but happy birthday. Sounds from the newsletter that you had a lovely time.
