Meal Plan 7 – Scone Based Pizza

I based this on a recipe I devised whilst doing the LBLUK challenge earlier this year. The picture comes from then, and I apologise for the blocky image it is!

50g soft cheese, Asda Smart Price (SP) 200g/88p, 22p
50g bacon, Asda SP 500g/75p, 8p
200g onion, Asda SP 2kg/£1.08, 11p
half a tin of tomatoes, or equivalent fresh ones, value ones, 31p tin, 16p

500g flour, value 45p/1.5kg, 15p
150g oil, £1.25/litre, 19p

Total price 91p, 4 portions 23p per portion
per quarter, 801 calories, 17g protein, 39g fat, 93g fat

First of all mix the flour and oil together and add enough water to make a soft dough. Pat out onto a baking tray.

Peel and chop the onion, saute in a smidge of oil until transparent.
Put the tomatoes in a pan, add half the onion. Season with salt and pepper and whizz until smooth.
Put the tomato sauce on the pizza base. Top with the remaining onion and the bacon, chopped small.
Now dot the soft cheese evenly over the topping.

Drizzle with a little oil around the scone edge if you like.

Bake in a medium hot oven until the scone base is golden, and the pizza looks cooked, about 25 minutes

If you are following meal plan 7, divide into 4 portions and have one quarter each for dinner on day 2, and the remaining 2 portions for lunch the next day.

Grind over some black pepper if you have some and dig in. This is a substantial meal. Have some salady bits with it if you have any. You can, of course, have smaller portions if you don’t want this many calories, and use the rest some other time. It would freeze.

Additional toppings that can be used if you have any available are as varied as in the Pizza Hut. Salami, pepperoni, sweetcorn, prawns, chicken, meatballs, eggs, mushroom, spinach etc etc. Absolutely anything that you like the sound of, it’s your dinner, have pineapple if you like.
