Spring Green Pesto
I tried Jack’s recipe for Kale Pesto this week. I didn’t have any kale, but I did have some spring greens that needed using, so in they went.
Jack used the soft cheese that has become one of my favourite ingredients, and crispy crumbs on top, which sounds delicious, but to be honest, I completely forgot about them and just used the pesto as it was.
It was very easy to do, I just bunged everything in the food processor and gave it a good whizz, and that was it.
It tasted leafy, of the strong greens that I had used, but I like that, and my dinner was delicious. Having seen that I missed out the cheese and crumbs, I will def add them next time. I have a big pot of pesto still to use 🙂
I used most of a pack of spring greens, 200g or so
80g strong cheddar
150ml veg oil
2 tblsp lemon juice from a bottle
Jack added some water, but mine seemed wet enough, so I didn’t add that
