Panettone is a gorgeous seasonal Italian cake, often given as a gift. Sometimes we have more than we want to eat as it is, lovely as that is.
If that is the case, this Panettone Tiramisu recipe might be the answer. It doesn’t take very long to make, but looks like you’ve gone to a lot of trouble!
What do I need to make Panettone Tiramisu
For 8 servings
- double cream – whisked to a soft dropping consistency
- mascarpone cheese – half a typical pack
- sugar – ordinary granulated is fine
- 500g panettone, I just use one of the cheap ones, you won’t notice the extra quality of a more expensive one in this. The one I got from Sainsbury’s was 500g, when pricing up at Aldi.com, there were no 500g Panettone. If you get a 750g one, you could either use 500g and use the extra for something else, or use the whole thing, there is plenty of the creamy mixture. I couldn’t have got an extra 250g in my big glass bowl though, so you’ll have to play it by ear. Perhaps make a small one with the extra 250g and some of the creamy mix?
- 3 eggs – separated
- 125ml strong coffee – I use decaffeinated as I can’t have the caffeine, it works just fine
- 125ml Marsala, Port or something like that. I can’t have alcohol, but the little bit in a portion is alright for me. If you don’t want the alcohol at all, use extra coffee and a tsp of vanilla paste
- cocoa powder to dust on top, not drinking chocolate
How to make Tiramisu with Panettone
- If you haven’t already done so whisk the double cream to a soft peak
- In a grease free and dry food processor, put the egg white and whisk until they have their full volume and would stay in the bowl if turned upside down. This might take more time than you think – 2-3 minutes on full speed
- In a metal or glass bowl, whisk the double cream, mascarpone, egg yolks and sugar
- Carefully fold in the whisked egg whites
- Mix the coffee and Marsala together
- Cut the panettone into 1 inch thick slices and into the shape of the dish
- Now layer up
- Put a layer of panettone in the bottom of the dish and drizzle over the coffee Marsala to wet the Panettone but not soak it
- Spoon over some of the creamy mixture
- Now repeat the layers until everything is used up, or the bowl is full
- Place you full bowl in the fridge
- A few minutes before you serve it, take it out of the fridge and sprinkle over a generous layer of cocoa powder. I have used organic cacao here because that’s what I had, it is lighter in colour than cocoa from the supermarket.
