If you haven't already done so whisk the double cream to a soft peak
400 g double cream
In a grease free and dry food processor, put the egg white and whisk until they have their full volume and would stay in the bowl if turned upside down. This might take more time than you think - 2-3 minutes on full speed
3 eggs
In a metal or glass bowl, whisk the double cream, mascarpone, egg yolks and sugar
125 g mascarpone cheese, 50 g sugar
Carefully fold in the whisked egg whites being careful to keep the air in the mixture .
Mix the coffee and Marsala together
125 ml strong coffee, 125 ml marsala
Cut the panettone into 1 inch thick slices and into the shape of the dish
Now layer up
Put a layer of panettone in the bottom of the dish and drizzle over the coffee Marsala to wet the Panettone but not soak it
Spoon over some of the creamy mixture
Now repeat the layers until everything is used up, or the bowl is full
Place your full bowl in the fridge
To Serve
A few minutes before you serve it, take it out of the fridge and sieve over a generous layer of cocoa powder
1 tbslp cocoa powder

I just use one of the cheap Panettone, you won't notice the extra quality of a more expensive one in this. The one I got from Sainsbury's was 500g, when pricing up at Aldi.com, there were no 500g Panettone. If you get a 750g one, you could either use 500g and use the extra for something else, or use the whole thing, there is plenty of the creamy mixture. I couldn't have got an extra 250g in my big glass bowl though, so you'll have to play it by ear. Perhaps make a small one with the extra 250g and some of the creamy mix?
strong coffee - I use decaffeinated as I can't have the caffeine, it works just fine
Marsala, Port or something like that. I can't have alcohol, but the little bit in a portion is alright for me. If you don't want the alcohol at all, use extra coffee and a tsp of vanilla paste
