We had a guest last night and had a roast chicken. I picked all the rest of the meat off this morning and the carcass is simmering as we speak.
I did some roast cauliflower and carrots to go with the chicken. The veg were drizzled with oil and sprinkled with tandoori spice, turmeric and cumin before they went in the oven and we had some green beans and broccoli too. I love roasting cauliflower with spices. It tastes really special and takes no effort at all to cook.
So today, when I was contemplating what to have for lunch, still with a lingering migraine, so not wanting much, and definitely unable to cope with much effort, these leftovers were the obvious place to go.
I chopped up a bit of iceberg lettuce, chopped up some of the green beans and put some of the lovely roasted veg on top of that. Then I mixed up one of my favourite salad dressings. A tablespoon each of full fat mayonnaise and Greek yogurt and a big teaspoon of Pataks Brinjal pickle.
It really hit the spot! Light, refreshing and very tasty. Would have been lovely with some of the chicken, but I didn’t want that much.
Feeling a bit more human by late afternoon, I made the Goan Fish curry using chicken for this evening. Using cooked chicken, it took all of ten minutes to knock up. I boiled some brown basmati to go with it and I had some Roti in the freezer from when I made a batch of 10 or so a little while ago, perfect for things like this evening.
So dinner was tasty too, I just had a little, so there are leftovers of that in the fridge as well now. Another Roti at lunchtime tomorrow?
