This is the 3rd post in a series of 4 exploring what to make with a pack of mackerel fillets
If, like me, you bought a pack of 2 smoked mackerel fillets, and there are 2 of you to feed, you will still have a whole fillet left. So what are we going to use the second fillet for?
How about this recipe for Smoked Mackerel & Roasted Beetroot Salad
you will need
- half of 1 fillet of smoked mackerel £2.03 for 2 fillets, 50p

half a 500g pk of cooked beetroot, 44p/500g 22p
- 1 tbslp oil, £1.25/1litre, 2p

black pepper
- half tin potatoes, or about 200g, 14p/tin, 7p
- dressing
- 3 tblsp oil £1.25/1litre, 6p
- 1 tblsp lemon juice 30p/100ml 4.5p
- dash of horseradish if you have it or
- tsp grainy mustard 58p/185g, 1.5p
- salt and pepper
- toss the beetroot in 1 tblsp oil, salt and pepper and roast them in a medium oven for 20 minutes or so.
- drain the potatoes, use half the tin and put the rest aside for another day. Halve the potatoes if they are large ones
- remove the mackerel skin and flake the flesh with a fork
- make the dressing by whisking all the ingredients together until they emulsify
- toss the roasted beetroot with the potatoes, mackerel and dressing
- serve with salady vegetables if you have any, or maybe a pitta or some rice
Serves 2
if you have any fresh herbs, you could fine chop some parsley and stir through, or maybe put a sprig of rosemary in with the beetroot while it is roasting
per serving 496 calories, 11g protein, 39g fat, 27g carb
this salad would also work as a jkt potato topping (leave out the potatoes in the salad), or (chopped up a bit more) in a sandwich or as a pitta filling
If you want fewer calories or fat, just cut down on the amount of dressing
