Vegetarian Christmas – Spiced Pot au Chocolat with a Spiced Biscuit

This spiced pot au chocolat, little chocolate pots, with a spiced biscuit or two, is from the Vegetarian Christmas meal plan. It’s even more lovely than I thought it would be!

Pot au Chocolat

Priced at Asda November 2018

100g bar of value plain chocolate, 30p
100ml double cream , whipped £1.05/300ml, 52p
2 tsps mixed spice 79p/33g, 24p

Break up the bar of chocolate and melt in a bowl over a pan of very gently simmering water. Don’t let the bottom of the bowl touch the water. Leave to cool. Add the mixed spice and whipped cream. If you have any liquers in the cupboard, add 2 tblsps.  Mix thoroughly and put into small pretty glasses, tea cups or tiny bowls. If you have any friends that use Gu: puddings, ask them if you can have the little pots. They are perfect for things like this.

Leave to set, which is more or less instant.

Serve your Pot au Chocolat with one or two spice biscuits using this recipe. Leave out the raisins unless you want to use them and have some in the cupboard. Add about a tblsp of mixed spice. Stir well and smell the mixture, if you can’t smell the spice, add a bit more.

Verdict

These little chocolate pots are totally gorgeous!  Soooo good, you’ll want another!  It’s rich and intense, smooth and full of flavour, with the alcohol adding it’s warmth.

Variations

Leave the spice out if you don’t want it, or maybe you are making it at a non Christmas time of year. I’d like to try ground cloves, nutmeg, cinnamon or pumpkin spice.

Vary the chocolate by using milk or white instead of plain. If you use white, the spice will make little freckles

Grate in the zest of an orange or lemon, or even a lime

Use a very thick Greek yogurt instead of cream to reduce the fat.

I know some dark chocolate is vegan (the one I used isn’t) so if you want a vegan version, use that and something like Oatly in place of the cream. The spiced biscuits that go with it are already vegan

I added 2 tblsps of Jack Daniels from the back of the cupboard which added a wonderful warmth. Any liquer or strong alcohol would do the job.

    I made this last Sunday – it was lush! Bunged a bit of Grand Marnier in it, which made it taste really rich. I shall be making it again for Christmas day, as my family are chocolate lovers!
