Whisk the flour and water together to make a smooth paste.
Heat a 20cm frying pan and add a little oil, half a tsp.
When the pan is hot, but not smoking, add a fifth of the batter.
Cook until set and the underside has golden spots on it, flip over and do the other side.
Put on a plate, and repeat with the other 4 pancakes, adding a tiny bit of oil when needed.
Sprinkle with sugar and about half a tsp of lemon juice for the classic pudding.

Variations
Other delectable fillings include Nutella (or here, of course, we would use the value jar) and banana
Dulce de leche and banana, maybe with a scoop of ice cream
Peanut butter and jam or banana, again, maybe with ice cream
A dollop of jam and a dollop of cream or ice cream
Any fruit compote with cream or ice cream, so maybe slices of apple fried in butter, with a sprinkle of cinnamon,
or grapes gently cooked in butter,
or early rhubarb, maybe with a spritz of orange zest
Or try a spiced syrup to drizzle over. I've tried mixed spice and star anise, both of which were amazing!
