Instructions
Simmer the peas in 500ml water for a couple of minutes
500 ml water,
250 g peas
Whizz with a stick blender or in a liquidiser until smooth.
Make a paste with the flour and oil and stir into the soup.
15 g flour,
20 ml veg oil
Whizz again and simmer very gently for a minute a two to cook off the flour.
Stir in the milk. Use plant milk and your soup will be vegan
100 ml milk
Season with salt and pepper

1 tsp pepper
Notes
Variations for Green Pea Soup
Add a sprig or two of mint if you have any. Or half a tsp of dried mint
Some big butter beans would be delicious in this, adding extra protein too
Or add 100g of red lentils - you would need to simmer for 20 minutes for this variation
If you prefer, you could use a plant milk
use butter, or any other fat, instead of vegetable oil
use half green peas and half sweetcorn - my daughter would love this, they are her favourite vegetables!
reduce the amount of water for a thicker soup, or add more flour
