Coronation Christmas Sandwich
A sandwich of lentils spiced with curry powder, moistened with mayonnaise and with a hint of sweetness from a jar of mincemeat, together with the fresh crunch of raw vegetables all encased in soft fresh bread. Absolutely delicious!

Ingredients

lentils
or 140g cooked lentils, keep the remaining half a tin for another day if you are following the meal plan

curry powder
any kind you like, not paste as that needs to be cooked

Instructions
Drain the can of lentils.
140 g lentils
Mix the curry powder, half the tin of lentils, mincemeat and mayonnaise
1 tsp curry powder,
1 tblsp mayonnaise,
2 tblsp mincemeat
Stir well together
Pile half the mix on 2 of the slices of bread, no need for butter.

Vegetables add a lovely fresh crunch. I shredded 3 small Brussels sprouts, and sliced a few rings from leek, the piled on top of the filling.

50 g leeks
Put the other 2 pieces of bread on top, one on each of the filled slices. Cut your sandwich in half.
Eat immediately as the filling is quite moist and the sandwich will go soggy if left for any length of time.
Notes
What variations are there for a Coronation Christmas sandwich?
A few green leaves would be nice, spinach from the garden perhaps, or a bit of lettuce, or maybe a few herb leaves, basil or parsley
You could use any dried fruit to add that note of sweetness; sultanas, currants, diced apricots, chopped dates etc
You could use the mix in a pitta or wrap, or on top of a jkt potato, or with some crudite (carrot batons and celery perhaps)
Add a boiled egg
Not got any mince meat? Use mixed dried fruit, or raisins
Use mango chutney as well as the mayonnaise
