If you aren't using leftover mashed potato, peel, boil and mash them now
Combine all the vegetables in a bowl.
Season and mix very well.
Taking an eighth of the mixture, about 130g, fashion into a patty with your hands.
Place the patties on a baking tray. Drizzle with oil. Bake in a hot oven until browned, about 30 minutes. A hot oven is Gas 7/ 425°F / 200°C Fan / 220°C
Meanwhile, grill the bacon to how you like it.
Serve with ketchup on the side.

Variations
Soup
If you need a packed lunch, or as a change, simply put the onion, potato, sweetcorn and bacon in a saucepan and simmer gently for 20 minutes to make a soup. Blitz or not, as you like. Season with salt and pepper and a little ketchup.
Jacket potato
Bake a jacket potato and use everything else to make a filling
Oven wedges
Or cut the potatoes into wedges, no need to peel, toss with a little oil and seasoning and bake for about 45 minutes until crispy and brown. Fry the onions. Serve the wedges with the onion, sweetcorn on the side and the cooked bacon, with ketchup.
