Put some oiled greaseproof paper in the bottom and long sides of a 2lb loaf tin. I use a shaped silicone liner, that I wash and use many many times
Heat the oven to Moderately Hot / Gas Mark 6 / 400°F / 200°C / 180°C Fan
Put all the dry ingredients into a bowl
Put all the wet ingredients into a jug
Mix the dry ingredients together
Whisk the wet ingredients together
Tip the wet ingredients into the dry ingredients and mix together
Tip the mixture into the lined loaf tin
Bake for 50-60 minutes until a skewer comes out clean. Start testing every 2or 3 minutes after 45 minutes cooking. You don't want to cook it too long or it will dry out
Notes
Cuts into 12 slices when cold, very difficult to cut when still warm and yummy
Variations
The dried fruit can be absolutely anything that you want to use
A bit of orange or lemon zest would be lovely
How about a tsp of cinnamon, or mixed spice, or a good dollop of vanilla paste
Replace some of the flour with a bran based cereal. I had some stale bran flakes for instance and used them up nicely in one of these
