Rubber Chicken (1) Pizza & Salad 46p

Did pizza this evening using some of the chicken. To be as fair as I could in the pricing of the chicken, I took the 454g of meat after we had had our roast lunch, and added an estimated 200g of meat for that. So a total of 654g of chicken meat divided by the £4.99 cost, disregarding anything from the stock completely.

Pizza base
250g flour, 45p/1.5kg, 7p
1.5 tsps yeast, small tin 64p, 7g, 3p
50ml warm water
0.5 tsp salt

Tin value tomatoes, 33p
Onion, 5p

Half a pepper, Aldi 3/89p, 15p
60g chicken, 45p
3 stuffing balls, 1/6 value pack/15p, 2p
40g value cheddar, £5/kg, 20p

Total cost £1.35, 34p a portion

Served with
Quarter of iceberg lettuce, £1 a head, 25p
Half a pepper, Aldi 3/89p, 15p
Eighth of cucumber, 80p a fruit, 10p
Few wild garlic leaves, free, from garden
Total 50p, 12p a portion

Pizza and salad, 34p + 12p = 46p

Mix the pizza base ingredients together with enough warm water to make a dough. Leave it to rise for as long as you can, the longer you can leave it, the more it improves the flavour. Maybe mix it up in the morning and leave it all day, or at any rate, leave it until risen.

Meanwhile, prepare the tomato base by chopping and frying the onion. When soft, add the tomatoes and simmer until thick. Then whizz if you want it smooth. Leave to cool if you have time.

Slice and chop all the topping ingredients and mix together.

When you are ready, bash the dough back and spread out onto a baking tray and leave to bounce back a little.

Spread the tomato sauce evenly over the base, top with the remaining topping ingredients and bake in a hot oven for about 25 minutes.

imageWhile it is cooking, chop all the salad ingredients, and serve while the pizza is hot.

This was yummy, I could taste both the chicken and the stuffing, even though there wasn’t much of it. I shall do this one again!

Incidentally, I counted 2 portions of pizza in the 26 portions, whereas I have actually made a 4 portion sized one, so that’s upped the total to 28 portions from 1 chicken – wahay
