Bread Pudden, made using leftover bread

Had some bread going rock hard, so made some bread pudding today. Could have been a bit of a disaster, as when the cooking time was nearly up, I remembered that I hadn’t put the fat in – argh.

But actually, it was fine. Didn’t even notice! So now I won’t bother to put any in.

I had less than 200g stale bread, so topped it up with cubes I had put in the freezer to make into croutons.

225g stale bread, Asda value loaf 36p, 10p
150g dried fruit, Asda 95p/500g, 28p
50g sugar, brown if you have it, Asda Billingtons £1.38/500g, 14p
50g butter/marg, although I missed it out accidentally, butter at Asda 88p/250g, 18p
1 tsp mixed spice, Asda 74p/33g, 7p
1 egg, Asda Smartprice, 8p

Total cost 85p, cuts into 9 pieces, 9p a piece

Total nutrition – 1500 cals, 225g carbs, 53g fat, 33g protein, 19g fibre

per portion (9) – 166 cals, 25g carbs, 6g fat, 4g protein, 2g fibre

Soak the bread in a little milk or water until very soft, but not completely sodden. Then just squidge everything together.

Put in a tin so that the mix is about one inch deep and press down to make it firm. Bake at 180 for 25 minutes, or until set. I sprinkled a little demerara on top for extra crunch, but it just went soft.

I used a few dates and the rest was raisins, any dried fruit would work, whatever you have. You can have this either as it is, or as a pudding with custard. DP loves it 🙂
